Flavorful Fajita Soup

Listen- the best recipes are those you create, so if you see something in here you don't like, take it out. If you want more of something,by all means, put it in! Personally, I do a little of this, add a little of that, but for those of you that need a step-by-step recipe, here it goes:
Flavorful Fajita Soup
This could be close to the consistency of chili. It's perfect on a cold day with a movie, blanket & hot tea!
Ingredients
1 Tablespoon oil
1 yellow onion (chopped)
2-4 cloves garlic
1 carrot (chopped)
1 green bell pepper (chopped)
2 yellow bell pepper (chopped)
1/2 teaspoon cumin (mccormick)
1/2 teaspoon chili powder
1 teaspoon chipotle chili pepper (mcc)
dash pepper (mccormick)
dash garlic salt (mcc)
2-3 tablespoons of cilantro (chopped)
juice of 1/2 a lime
2 cans black beans (1 can drained, the other we will use the juice)
1/2 - 1 cup of gluten free chicken broth (depending on your consistency of choice)
5-7 cherry tomatoes (sliced)
* Gluten free salsa of choice
Garnish:
chicken (if not vegetarian)
1 avocado (sliced)
a dollop of sour cream (I use Daisy light)
shredded cheese
blue chips
Directions
In a heavy quart size soup pot, saute chopped onions in oil for 2-5 minutes (until transluscent). Add garlic, carrots, bell peppers, spices, cilantro and simmer for 4-5 minutes. Squeeze juice of half of lime, pour in all of the contents of one can of black beans & the drained black beans. Add broth and cherry tomatoes bring to boil, then simmer. Stir in gluten free salsa and it's ready to be served! Add your garnishes, crunch your blue chips and eat away!
*(I'd give you the recipe for an amazing gluten free salsa, but it's my sisters, and is not allowed to be shared. If your's does not have some kick then add 2 chopped jalapenos)
